Savory Chinese-style beef lo mein with tender marinated beef, springy noodles and crisp vegetables in a flavorful oyster-soy sauce.

0.083 tbsp sesame seed oil
0.5 pcs egg
3 tbsp corn starch
5 tbsp oil
0.25 lb noodles
0.5 cup onion
1 tsp minced garlic
1 tsp ginger minced
1 cup bean sprouts
1 cup mushrooms
1 cup water
1 tbsp oyster sauce
1 tsp sugar
1 tsp soy sauce
Directions
Marinate beef with salt, white pepper, 1 tsp sesame oil, 0.5 egg, 3 tbsp corn starch and 1 tbsp oil; mix and let sit.
Boil noodles in plenty of water until submerged and blanched (about 10 seconds), drain and rinse with cold water; set aside.
Heat 2 tbsp oil in a pan on high, stir-fry marinated beef until medium cooked, remove and set aside.
In a wok add 2 tbsp oil, add onion, minced garlic, minced ginger, bean sprouts and mushrooms, pour enough water (about 1.5 cups) to just submerge vegetables and bring to a simmer.
Add noodles to the wok with the vegetables.
Make sauce by combining oyster sauce, a pinch white pepper, 1 tsp sesame oil, sugar and 1 tsp soy sauce; add to wok.
Return beef to the wok and stir-fry everything together until sauce coats noodles and beef is cooked through; adjust seasoning and serve immediately.
