A homemade Big Mac with juicy seared beef patties, melty cheese and tangy special sauce served on toasted sesame buns — classic American comfort in every bite.
Make the Big Mac sauce: combine mayonnaise, white wine vinegar, mustard, onion salt, garlic powder, paprika and a pinch of pepper in a bowl, season with salt to taste and chill until ready to use.
Season the minced beef with salt and pepper and divide into four portions (about 1/3 cup each). Place each portion on a square of baking paper and flatten into 15 cm (approx) patties.
Heat olive oil in a large frying pan over high heat. In two batches, cook patties 1–2 minutes per side until lightly charred and cooked through. Remove and keep warm.
Carefully slice each burger bun into three horizontal layers and lightly toast.
Assemble burgers: spread some sauce on the bottom bun, add chopped onion, shredded lettuce, a cheese slice, a beef patty and pickle slices. Add the middle bun layer, repeat sauce, onion, lettuce, pickles and the second patty, finish with more sauce and the top bun.
Optional: wait briefly for food to settle before serving.
