Beef Caldereta

Beef Caldereta

Ingredients

  • 2 kg beef (cut into cubes)
  • 1 pcs beef stock cube
  • 1 tbsp soy sauce
  • 2 cups water
  • 1 pcs green bell pepper (sliced)
  • 1 pcs red bell pepper (sliced)
  • 1 pcs potato (sliced)
  • 1 pcs carrot (sliced)
  • 227 g tomato puree
  • 3 tbsp peanut butter
  • 5 g chili powder
  • 1 pcs onion (chopped)
  • 5 pcs garlic (cloves)
  • 3 tbsp olive oil

Directions

  • Heat oil in a cooking pot and sauté onion and garlic until onion softens.
  • Add beef and sauté until the outer part turns light brown.
  • Add soy sauce, pour in tomato puree and water, and let boil.
  • Add beef stock cube, cover and cook (pressure cooker) for 30 minutes.
  • Pan-fry carrot and potato until browned, then set aside.
  • Add chili powder and peanut butter (and liver spread if using) and stir.
  • Add bell peppers, fried potato and carrot, cover and continue cooking for 5 to 7 minutes.
  • Season with salt and ground black pepper and serve.
