Beef Asado

Tender Filipino-style beef asado braised in a savory tomato-soy sauce, finished with sautéed aromatics and butter for a rich, glossy glaze.

Beef Asado

Ingredients

  • 1.5 kg beef
  • 1 pcs beef stock concentrate (Knorr beef cube)
  • 226.8 g tomato puree
  • 720 ml water
  • 6 tbsp soy sauce
  • 1 tbsp white wine vinegar
  • 2 tbsp black pepper (crushed)
  • 4 pcs bay leaf
  • 0.5 pcs lemon (halved)
  • 2 tbsp tomato sauce/paste
  • 3 tbsp butter
  • 120 ml olive oil
  • 1 pcs onion (chopped)
  • 4 pcs garlic (cloves)

Directions

  • Combine beef, crushed pepper, soy sauce, vinegar, bay leaves, lemon and tomato sauce; mix and marinate at least 30 minutes.
  • Place marinated beef and remaining marinade in a pot; add water and bring to a boil.
  • Add beef stock concentrate and stir; cover and simmer on low for 40 minutes.
  • Turn the beef, add tomato paste and continue cooking until beef is tender; set aside.
  • Heat oil in a pan and fry potatoes until browned on both sides (repeat for carrots if using).
  • Reserve 3 tbsp of the pan oil, then sauté onion and garlic in it until onion softens.
  • Pour in the sauce from the beef stew and bring to a boil; add the beef and cook 2 minutes.
  • Add butter and let melt; continue cooking until the sauce reduces by half.
