Chocolate Raspberry Brownies

  • dark chocolate
  • 100 g milk chocolate
  • 250 g salted butter
  • 400 g light brown soft sugar
  • 4 pcs eggs (large)
  • 140 g plain flour
  • 50 g cocoa powder
  • 200 g raspberries

Directions

  • Preheat oven to 180C (160C fan) / gas mark 4 and line a 20x30 cm baking tray with parchment.
  • Put the dark and milk chocolate, butter and sugar in a pan and gently melt, stirring occasionally.
  • Remove the pan from the heat and stir in the eggs one at a time.
  • Sieve in the flour and cocoa and fold into the chocolate mixture.
  • Stir in half the raspberries, scrape the batter into the prepared tray and scatter the remaining raspberries on top.
  • Bake on the middle shelf for 30 minutes (or 35 minutes for a firmer texture).
  • Cool completely before slicing into squares and store in an airtight container for up to 3 days.
