Chicken Congee

Comforting Chinese chicken congee — a silky rice porridge with tender marinated chicken, ginger and scallions, garnished with fresh coriander.

Chicken Congee

Ingredients

  • 226.8 g chicken
  • 0.01 tsp salt
  • 0.01 tsp pepper
  • 1 tsp ginger cordial
  • 1 tsp ginger
  • 1 tbsp spring onions
  • 0.5 cup rice
  • 1892.71 ml water
  • 56.7 g coriander

Directions

  • Marinate the chicken with salt, pepper, ginger cordial (ginger juice) and mix well; set aside.
  • Rinse the rice a couple times and drain.
  • Bring 8 cups (1892.71 ml) water to a boil, add rice and boil then reduce to low heat.
  • Stir the porridge every 8–10 minutes for about 20–25 minutes, adding a little more water if you prefer a thinner consistency.
  • Add the marinated chicken to the porridge and cook on low for another 10 minutes.
  • Add spring onions, sliced ginger, a pinch of salt and a pinch of white pepper and stir briefly.
  • Serve the congee in bowls and optionally garnish with coriander.
