Christmas Pudding Trifle

Ingredients

  • 3 pcs orange
  • 1 tbsp demerara sugar
  • 2 tbsp grand marnier
  • 300 g christmas pudding
  • 500 g custard
  • 250 g mascarpone
  • 284 ml double cream
  • handful flaked almonds
  • grated dark chocolate

Directions

  • Peel the oranges, remove all pith and slice as thinly as possible and arrange on a plate.
  • Sprinkle the orange slices with demerara sugar and drizzle with Grand Marnier, set aside to macerate.
  • Crumble the Christmas pudding into large pieces and scatter over the bottom of a trifle bowl.
  • Lift the macerated orange slices onto the pudding in a layer and pour over any juices.
  • Beat the mascarpone until smooth then stir in the custard and spoon the mixture over the oranges.
  • Lightly whip the double cream and spoon it over the custard layer.
  • Sprinkle with flaked almonds and grated dark chocolate.
  • Chill for up to a day before serving if desired.
