Corned Beef and Cabbage

  • 1.36 kg beef brisket (corned beef)
  • 10 pcs small potatoes
  • 5 pcs carrots
  • 1 head cabbage
  • 1 spice packet (from corned beef)

Directions

  • Place corned beef in a large pot or Dutch oven and cover with water; add the spice packet. Cover and bring to a boil, then reduce to a simmer and cook about 50 minutes per pound (approx 50 min/lb) or until tender.
  • Add whole potatoes and peeled, cut carrots and cook until the vegetables are almost tender. Add cabbage and cook about 15 more minutes.
  • Remove meat and let rest 15 minutes. Place vegetables in a bowl and cover; add cooking broth as desired. Slice meat across the grain and serve.
