1 pcs chicken breast
0.25 cup pickle juice
1 pcs egg
0.25 cup milk
0.5 cup flour
0.0625 cup icing sugar
0.5 tsp paprika
0.5 tsp salt
0.25 tsp black pepper
0.25 tsp garlic powder
0.25 tsp celery salt
0.5 tsp cayenne pepper
1 cup olive oil
1 pcs sesame seed burger buns
Directions
Wrap the chicken loosely between plastic wrap and pound gently with the flat side of a meat tenderizer until about 0.5 inch thick all around.
Cut into two pieces as even as possible.
Marinate in the pickle juice for 30 to 60 minutes (optionally add 1 tsp hot sauce for spice).
Beat the egg with the milk in a bowl.
Combine the flour, icing sugar and spices in another bowl.
Dip the chicken pieces into the egg on both sides, then coat in the flour mixture on both sides.
Heat oil in a skillet to about 345-350°F (about 174-177°C), about 0.5 inch deep.
Fry each cutlet 2 minutes per side or until golden and cooked through.
Blot on paper towels and serve on toasted buns with pickle slices.
