Coddled pork with cider

Ingredients

  • 0.03 kg butter
  • 2 pcs pork chops
  • 4 pcs bacon rashers
  • 2 pcs potatoes
  • 1 pcs carrot
  • 0.5 pcs swede
  • 0.5 pcs cabbage
  • 1 pcs bay leaf
  • 100 ml cider
  • 100 ml chicken stock

Directions

  • Heat the butter in a casserole until sizzling, then fry the pork 2–3 minutes each side until browned and remove from pan.
  • Add the bacon, carrot, potatoes and swede to the pan and gently fry until slightly coloured, stir in the cabbage, place chops back on top and add the bay leaf.
  • Pour over the cider and stock, cover and gently simmer 20 minutes until pork is cooked through and vegetables are tender.
  • Serve spooned straight from the dish.
