Croatian Bean Stew

Ingredients

  • 2 cans cannellini beans
  • 3 tbsp vegetable oil
  • 2 cups tomatoes
  • 5 pcs shallots
  • 2 cloves garlic
  • pinch parsley
  • 0.5 kg chorizo (chopped)

Directions

  • Heat the oil in a pan.
  • Add the chopped vegetables (shallots, garlic, tomatoes, parsley) and sauté until tender.
  • Take a pot and empty the beans together with the sautéed vegetables into it.
  • Add the chopped chorizo/sausages and cook on low heat for 20 minutes.
  • Alternatively, transfer to an ovenproof dish and bake at 180°C/350°F for 30 minutes.
  • Serve hot; dish improves when reheated the next day.
