Crispy Eggplant

Ingredients

  • 1 pcs (large) eggplant
  • 1 cup breadcrumbs
  • 50 g sesame seeds
  • 2 pcs eggs
  • to taste salt
  • to taste black pepper
  • vegetable oil (for frying)

Directions

  • Slice eggplant into 1 cm slices and sprinkle with salt; let sit 30 minutes to draw out liquid and bitterness.
  • Rinse slices to remove excess salt and pat dry with a kitchen towel.
  • Place breadcrumbs and sesame seeds in a large bowl or plate.
  • Beat eggs with a pinch of salt and pepper in another bowl.
  • Heat oil in a large skillet over high heat.
  • Dip eggplant slices in the beaten egg, then coat with the breadcrumb-sesame mixture.
  • Fry slices 2–3 minutes per side until golden brown.
  • Drain on paper towels and serve.
