Cabbage Soup (Shchi)

Ingredients

  • 3 tbsp unsalted butter
  • 1 pcs onion
  • 1 pcs cabbage
  • 1 pcs carrot
  • 1 pcs celery
  • 1 pcs bay leaf
  • 1892.72 ml vegetable stock
  • 2 pcs potato
  • 2 pcs tomato

  • dill

Directions

  • Melt butter in a large heavy pot over medium heat.
  • Add onion and sauté until translucent.
  • Add cabbage, carrot and celery and sauté until beginning to soften, about 3 minutes, stirring frequently.
  • Add bay leaf and vegetable stock and bring to a boil over high heat.
  • Reduce heat to low, cover and simmer until vegetables are crisp-tender, about 15 minutes.
  • Add potatoes and bring to a boil over high heat.
  • Reduce heat to low, cover and simmer until potatoes are tender, about 10 minutes.
  • Add tomatoes and bring to a boil over high heat.
  • Reduce heat to low and simmer uncovered for 5 minutes.
  • Season to taste with salt and pepper.
  • Remove and discard the bay leaf.
  • Serve topped with sour cream and dill.
