Eton Mess

A decadent British dessert of whipped cream, sweet strawberries and crunchy meringue combined into a light, refreshing treat.

Ingredients

  • 500 g strawberries
  • 400 ml double cream
  • 3 pcs meringue nests
  • 1 tbsp ginger cordial
  • 4 pcs fresh mint sprigs

Directions

  • Purée half the strawberries in a blender.
  • Chop the remaining strawberries, reserving four for decoration.
  • Whip the double cream until stiff peaks form.
  • Crush the meringue nests.
  • Fold the strawberry purée and crushed meringue into the whipped cream.
  • Fold in the chopped strawberries and ginger cordial if using.
  • Spoon equal amounts of the mixture into four cold wine glasses.
  • Garnish with the reserved strawberries and a sprig of mint for each serving.
