French Lentils With Garlic and Thyme
Hearty French-style lentils simmered with garlic, thyme and aromatic vegetables—comforting and savory, perfect as a warm side or light main.

Ingredients

- 3 tbsp olive oil
- 1 pcs onion, chopped
- 2 pcs garlic, minced
- 1 pcs carrot, chopped
- 2.25 cups French lentils
- 1 tsp thyme, dried or fresh
- 3 pcs bay leaf
- 1 tbsp salt
- 2 pcs celery stalks, chopped
Directions
- Place a large saucepan over medium heat and add oil.
- When hot, add chopped vegetables and sauté until softened, 5 to 10 minutes.
- Add 6 cups water, lentils, thyme, bay leaves and salt.
- Bring to a boil, then reduce to a fast simmer.
- Simmer lentils until tender and most of the water is absorbed, 20 to 25 minutes.
- If necessary, drain any excess water after lentils have cooked.
- Serve immediately or allow to cool and reheat later.
- Optional: for fuller taste, substitute some water with chicken stock and reduce water by same amount.
