French Lentils With Garlic and Thyme

Ingredients

  • 3 tbsp olive oil
  • 1 pcs onion, chopped
  • 2 pcs garlic, minced
  • 1 pcs carrot, chopped
  • 2.25 cups French lentils
  • 1 tsp thyme, dried or fresh
  • 3 pcs bay leaf
  • 1 tbsp salt
  • 2 pcs celery stalks, chopped

Directions

  • Place a large saucepan over medium heat and add oil.
  • When hot, add chopped vegetables and sautĂ© until softened, 5 to 10 minutes.
  • Add 6 cups water, lentils, thyme, bay leaves and salt.
  • Bring to a boil, then reduce to a fast simmer.
  • Simmer lentils until tender and most of the water is absorbed, 20 to 25 minutes.
  • If necessary, drain any excess water after lentils have cooked.
  • Serve immediately or allow to cool and reheat later.
  • Optional: for fuller taste, substitute some water with chicken stock and reduce water by same amount.
