Smoky grilled Portuguese sardines marinated with garlic, paprika and rosemary—charred outside and juicy inside, perfect served with a squeeze of lemon.

Grilled Portuguese sardines

Ingredients

  • 8 pcs sardines
  • 2 tbsp olive oil
  • 3 pcs garlic cloves
  • 1 tbsp paprika
  • 0.5 pcs lemon
  • 4 pcs rosemary sprigs
  • 1 pcs red chilli

Directions

  • Combine olive oil, garlic, paprika, half a lemon (juice), rosemary, red chilli and seasoning in a bowl.
  • Pour marinade into a baking dish, add sardines and toss to coat, cover and chill for a few hours.
  • Heat a BBQ or griddle pan until hot.
  • Cook sardines 4–5 minutes per side until caramelised and charred.
  • Place on a serving plate, drizzle with a little more olive oil, sprinkle extra paprika and squeeze over lemon wedges.
