Home-made Mandazi

  • 750 g self-raising flour
  • 6 tbsp sugar
  • 2 pcs eggs
  • 240 ml milk

Directions

  • Mix the flour and sugar (and cinnamon if using) in a suitable bowl.
  • In a separate bowl whisk the eggs into the milk.
  • Make a well in the centre of the flour and add the milk and egg mixture, slowly mixing to form a dough.
  • Knead the dough for 3-4 minutes until smooth and no longer sticking to the bowl.
  • Cover the dough with a damp cloth and allow to rest for 15 minutes.
  • Roll the dough on a lightly floured surface to about 1 cm thickness.
  • Cut the dough into desired pieces with a sharp knife and set aside for frying.
  • Heat oil in a suitable pot and fry the mandazi pieces until light brown on the first side, then turn and cook the second side.
  • Serve warm or cold
