Lamb Tzatziki Burgers

Ingredients

  • 25 g bulgur wheat
  • 500 g lamb mince
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 pcs garlic (finely chopped)
  • olive oil (for frying)
  • 4 pcs buns
  • cucumber (grated)
  • 200 g Greek yogurt
  • 2 tbsp mint (chopped)

Directions

  • Tip the bulgur into a pan, cover with water and boil for 10 minutes then drain well, pressing out excess water.
  • Squeeze grated cucumber to remove and discard excess juice.
  • Mix squeezed cucumber into Greek yogurt with chopped mint and a little salt to make tzatziki.
  • Work drained bulgur into lamb with cumin, coriander, paprika, chopped garlic and seasoning.
  • Shape mixture into 4 burgers.
  • Brush burgers with a little olive oil and fry or barbecue about 5 minutes each side until cooked through.
  • Toast buns if desired and assemble burgers in buns with tzatziki, tomatoes, onion and extra mint leaves.
