A rustic Greek-inspired moussaka with savory beef, tender aubergine and creamy yogurt-parmesan topping—comforting, hearty and golden on top.

  • 500 g beef
  • 1 pcs aubergine
  • 150 g greek yogurt
  • 1 pcs egg (beaten)
  • 3 tbsp parmesan
  • 400 g tomato (chopped)
  • 4 tbsp tomato purée
  • 350 g potatoes

Directions

  • Heat the grill to high.
  • Brown the beef in a deep ovenproof frying pan over a high heat for 5 minutes.
  • Meanwhile prick the aubergine with a fork and microwave on High for 3 to 5 minutes until soft.
  • Mix the Greek yogurt, beaten egg and parmesan together and season to taste.
  • Stir the tomatoes, tomato purée and potatoes into the beef with seasoning and heat through.
  • Smooth the surface of the beef mixture, slice the cooked aubergine and arrange on top.
  • Pour the yogurt mixture over the aubergines, smooth evenly and grill until the topping has set and turned golden.
