Potato Salad (Olivier Salad)
Creamy Russian-style potato (Olivier) salad with tender potatoes, crunchy veggies, sausage and dill—refreshing, satisfying and perfect chilled.

- 4 pcs potatoes
- 3 pcs carrots
- 1 tbsp salt
- 0.5 tbsp white wine vinegar
- 4 pcs eggs (hard-boiled)
- 198.45 g sausages
- 113.4 g dill
- 1 can peas (canned)
- 4 pcs onions (green onions)
- 1 cup mayonnaise
Directions
- Cut the potatoes and carrots into small uniform cubes.
- Place them in a large pot and fill with water.
- Add salt and vinegar.
- Bring to a boil over medium-high heat, then reduce to medium and cook until potatoes are cooked through, about 15 minutes.
- Drain potatoes and let cool to room temperature.
- Meanwhile cut the sausage and pickles into small cubes and chop the green onions.
- Cut the hard-boiled eggs into small cubes.
- If using fresh dill, chop it.
- In a large bowl combine potatoes, carrots, sausage, pickles, peas and green onions.
- Add mayonnaise and dill and mix until well combined.
- Season with salt and pepper to taste.
- Cover and refrigerate at least 1 hour before serving.
