Potato Salad (Olivier Salad)

Ingredients

  • 4 pcs potatoes
  • 3 pcs carrots
  • 1 tbsp salt
  • 0.5 tbsp white wine vinegar
  • 4 pcs eggs (hard-boiled)
  • 198.45 g sausages
  • 113.4 g dill
  • 1 can peas (canned)
  • 4 pcs onions (green onions)
  • 1 cup mayonnaise

Directions

  • Cut the potatoes and carrots into small uniform cubes.
  • Place them in a large pot and fill with water.
  • Add salt and vinegar.
  • Bring to a boil over medium-high heat, then reduce to medium and cook until potatoes are cooked through, about 15 minutes.
  • Drain potatoes and let cool to room temperature.
  • Meanwhile cut the sausage and pickles into small cubes and chop the green onions.
  • Cut the hard-boiled eggs into small cubes.
  • If using fresh dill, chop it.
  • In a large bowl combine potatoes, carrots, sausage, pickles, peas and green onions.
  • Add mayonnaise and dill and mix until well combined.
  • Season with salt and pepper to taste.
  • Cover and refrigerate at least 1 hour before serving.
