Spicy North African Potato Salad
A vibrant spicy North African potato salad with harissa, fresh herbs, peppery rocket and creamy feta—bold, zesty and great warm or room temperature.

- 650 g small potatoes
- 1 tsp harissa spice
- 2 tsp olive oil
- 0.5 pcs lemon juice
- 4 pcs spring onions
- 150 g rocket (arugula)
- 80 g feta
- 20 g mint
- 2 tbsp pine nuts
- pinch salt
- pinch pepper
Directions
- Place potatoes in a pot of cold water and bring to the boil; boil about 20 minutes or until tender.
- Combine harissa spice, olive oil, salt, pepper and lemon juice in a small bowl and whisk until combined.
- Drain cooked potatoes and roughly halve them.
- Add harissa mixture and spring onions to the potatoes and stir to coat.
- Lay out rocket (arugula) in a large salad bowl and top with the potato mixture, then toss.
- Scatter feta and mint over the salad and sprinkle with pine nuts.
- Adjust salt and pepper to taste.
