Spicy North African Potato Salad

Ingredients

  • 650 g small potatoes
  • 1 tsp harissa spice
  • 2 tsp olive oil
  • 0.5 pcs lemon juice
  • 4 pcs spring onions
  • 150 g rocket (arugula)
  • 80 g feta
  • 20 g mint
  • 2 tbsp pine nuts
  • pinch salt
  • pinch pepper

Directions

  • Place potatoes in a pot of cold water and bring to the boil; boil about 20 minutes or until tender.
  • Combine harissa spice, olive oil, salt, pepper and lemon juice in a small bowl and whisk until combined.
  • Drain cooked potatoes and roughly halve them.
  • Add harissa mixture and spring onions to the potatoes and stir to coat.
  • Lay out rocket (arugula) in a large salad bowl and top with the potato mixture, then toss.
  • Scatter feta and mint over the salad and sprinkle with pine nuts.
  • Adjust salt and pepper to taste.
