Spotted Dick

A classic British steamed pudding studded with currants and citrus zest, warm and comforting when served with creamy custard.

Ingredients

  • 250 g self-raising flour
  • 0.01 g salt
  • 125 g suet
  • 175 g currants
  • 80 g caster sugar
  • 1 pcs lemon zest
  • 1 pcs orange zest
  • 150 ml milk
  • custard (to serve)

Directions

  • Put the flour and salt in a bowl.
  • Add the suet, currants, sugar, lemon and orange zest.
  • Pour in 150ml milk and mix to a firm but moist dough, adding extra milk if necessary.
  • Shape into a fat roll about 20cm long.
  • Place on a large rectangle of baking parchment and wrap loosely, tying the ends with string like a Christmas cracker.
  • Place a steamer over a large pan of boiling water, add the pudding, cover and steam for 1.5 hours, topping up the pan with water as needed.
  • Remove from the steamer and allow to cool slightly before unwrapping.
  • Serve sliced with custard.
