Sweet and Sour Pork

  • 200 g pork
  • 1 pcs egg
  • water (dash)
  • 0.5 tsp salt
  • 1 tsp sugar
  • 10 g soy sauce
  • 10 g starch
  • 30 g tomato puree
  • 10 g vinegar
  • coriander

Directions

  • Crack the egg and separate white and yolk.
  • Slice pork tenderloin into strips.
  • Prepare marinade: mix a pinch of salt, 1 tsp starch, 2 tsp soy sauce and the egg white.
  • Marinate pork strips about 20 minutes.
  • In a bowl mix remaining starch with some water and vinegar to make a starchy sauce.
  • Heat oil in a wok to about 190°C (375°F) and fry marinated pork until brown; remove and drain.
  • Leave some oil in the wok; add tomato puree and sugar and heat until combined with oil.
  • Add some water and heat the sweet and sour sauce thoroughly, then add fried pork strips.
  • Pour in the starchy sauce and stir-fry until pork and sauce are well combined.
  • Serve on a plate and garnish with coriander.
