Ingredients

  • 0.5 lb beef
  • 0.5 tsp salt
  • 1 tsp sesame seed oil
  • 1 pinch pepper
  • 1 pcs egg white
  • 3 tbsp starch (cornstarch)
  • 4 tbsp oil
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 0.75 cup onion, sliced
  • 0.5 cup carrots, sliced
  • 0.75 cup green pepper, sliced
  • 1 cup celery, sliced
  • 1 cup mushrooms, sliced
  • 1 tbsp cooking wine (sherry)
  • 1 cup water
  • 1 tbsp oyster sauce
  • 0.5 tsp hot sauce
  • 1 tsp sugar
  • 1 tbsp soy sauce

Directions

  • Marinate beef with salt, sesame oil, white pepper, egg white, 2 tbsp cornstarch and 1 tbsp oil; set aside to absorb flavors.
  • Heat 2 tbsp oil in a pan or wok and stir-fry beef until golden brown; remove and set aside.
  • Add 1 tbsp oil to the wok, stir-fry minced ginger and garlic for a few seconds.
  • Add onion, carrots, green pepper, celery and mushrooms and stir-fry briefly.
  • Add cooking wine and 1 cup water, bring to a simmer.
  • Add oyster sauce, hot sauce and sugar to make the sauce.
  • Return cooked beef to the wok and add 1 tbsp soy sauce; stir to combine.
  • Whisk 1 tbsp cornstarch with 2 tbsp water and slowly add to the stir-fry, cooking until sauce thickens to desired consistency.
