Salmon Avocado Salad

Ingredients

  • 400 g salmon
  • 3 pcs avocado
  • 1 pcs cucumber
  • 400 g spinach
  • 4 tbsp mint
  • 1 pcs lime zest
  • 1 pcs lime juice
  • 2 tsp honey
  • 3 tbsp olive oil

Directions

  • Season the salmon and rub with oil.
  • Mix the dressing ingredients together (lime zest and juice, honey, 1.5 tbsp olive oil approx if splitting dressing).
  • Halve, stone, peel and slice the avocados.
  • Halve and quarter the cucumber lengthways, then cut into slices.
  • Divide spinach, avocado and cucumber between four plates and drizzle with half the dressing.
  • Heat a non-stick pan and add the salmon; fry 3–4 minutes on each side until crisp outside and moist inside.
  • Place a salmon fillet on top of each salad and drizzle with the remaining dressing.
  • Serve warm.
