Ingredients

  • 1 kg chicken thighs
  • 0.015 kg ground coriander
  • 0.015 kg ground cumin
  • 0.015 kg ground cardamom
  • 0.005 kg cayenne pepper
  • 0.01 kg paprika
  • 0.03 l lemon juice
  • 0.045 l olive oil
  • 0.24 l Greek yogurt
  • 1 pcs garlic clove
  • 0.005 kg extra cumin
  • 0.01 l lemon juice (splash)
  • lettuce, sliced
  • tomato, sliced
  • 6 pcs pita bread

Directions

  • Combine marinade ingredients (spices, lemon juice, olive oil, yogurt if used, garlic and cumin) in a large ziplock bag or bowl.
  • Add chicken and massage to coat well; seal bag if using and ensure all pieces are covered.
  • Marinate overnight or up to 24 hours.
  • Combine yogurt sauce ingredients in a bowl, mix, cover and refrigerate until needed.
  • Heat grill, BBQ or heavy pan to medium-high; oil if desired.
  • Grill chicken 4–5 minutes on first side until charred, then 3–4 minutes on second side.
  • Remove chicken, loosely cover with foil and rest for 5 minutes.
  • Slice chicken and serve with flatbreads, salad and yogurt sauce.
  • To serve as wraps: smear pita with yogurt sauce, top with lettuce, tomato and sliced chicken, roll up and enjoy.
