Turkey Meatloaf

Turkey Meatloaf

Ingredients

  • 0.015 l olive oil
  • 1 pcs (large) onion
  • 1 pcs garlic clove peeled crushed
  • 0.03 l worcestershire sauce
  • 0.015 l tomato purée
  • 500 g turkey mince
  • 1 pcs (large) egg
  • 85 g breadcrumbs
  • 0.03 l barbecue sauce
  • 800 g cannellini beans (canned)
  • 0.02 g parsley

Directions

  • Heat oven to 180C (160C fan)/gas 4.
  • Heat the oil in a large frying pan and cook the onion for 8–10 minutes until softened.
  • Add the garlic, Worcestershire sauce and 2 tsp (≈0.01 l) tomato purée, stir until combined and set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mixture in a large bowl, season well and mix to combine.
  • Shape into a rectangular loaf, place in a large roasting tin and spread 2 tbsp (≈0.03 l) barbecue sauce over the meatloaf.
  • Bake for 30 minutes.
  • Meanwhile, drain one can of beans only, then pour both cans (total 800 g) into a large bowl; add the remaining barbecue sauce and tomato purée, season and set aside.
  • After initial cooking, scatter the beans around the meatloaf and bake for a further 15 minutes until meatloaf is cooked through and beans are piping hot.
  • Scatter over parsley and serve the meatloaf in slices.
