Traditional Croatian Goulash

Hearty Croatian beef goulash: tender marinated beef slow-simmered with onions, carrots, garlic and red wine for a rich, comforting stew.

Traditional Croatian Goulash

Ingredients

  • 500 g beef
  • 2 pcs onion, chopped
  • 2 pcs carrot, chopped or shredded
  • 2 pcs garlic cloves
  • 2 pcs bay leaf
  • 200 ml red wine
  • 2000 ml water
  • 3 tbsp mustard
  • 1 tbsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp vegetable oil

Directions

  • Trim fat and cut beef into ~3x3 cm pieces. Marinate beef with mustard, salt, pepper and paprika and refrigerate 1 hour.
  • Heat 1 tbsp oil in a pot and brown the meat on all sides; remove meat to a plate and add another 1 tbsp oil.
  • Finely chop onions and shred carrots. Cook onions and carrots over low heat about 15 minutes, seasoning lightly with salt to soften.
  • Return meat to the pot with bay leaves and garlic. Pour in red wine and simmer 10–15 minutes to evaporate alcohol.
  • Add about two thirds of the water, cover and cook over low heat 1 hour, stirring occasionally.
  • Add remaining water or stock and cook another 30–45 minutes until meat is tender.
  • Let stew cool slightly, garnish with chopped parsley and sliced hot pepper if desired, and serve with fresh bread and salad.
