Walnut Roll Gužvara

A tender, golden Croatian walnut roll with a sweet spiced walnut-butter filling and a glossy icing sugar finish — perfect for sharing with tea or coffee.

Walnut Roll Gužvara

Ingredients

dough

  • 450 g flour
  • 55 g caster sugar
  • 2 pcs yeast (fresh or instant)
  • 0.5 tsp salt
  • 170.1 ml milk (for dough)
  • 2 pcs eggs (beaten)
  • 30 g butter (for dough)

filling

  • 140 g walnuts (ground)
  • 85 g butter (for filling)
  • 85 g brown sugar
  • 1 tsp cinnamon

glaze

  • milk (for glazing)
  • icing sugar (for dusting)

Directions

  • Mix all dough ingredients together and knead well.
  • Cover dough and let rise until doubled in size, about 2 hours.
  • Knock back dough and knead lightly.
  • Divide dough into two equal pieces and roll each into an oblong about 12in by 8in.
  • Mix filling ingredients and spread evenly over each dough piece.
  • Roll each oblong tightly into a 12in sausage.
  • Place the two rolls side by side on a greased baking sheet, cover and leave to rise about 40 minutes.
  • Heat oven to 200°C (425°F).
  • Bake 30–35 minutes until risen and golden brown and sounding hollow when tapped on the base.
  • Brush hot bread top with milk and sift a generous covering of icing sugar over the top.
